Avianca will feature chef Catalina Vélez, who will join Álvaro Clavijo —chef of "El Chato," included in the list of "The World's 50 Best Restaurants"—, to design a new menu for the business class on flights from Bogotá to destinations in Europe as part of the Avianca Insignia experience.
Catalina Vélez is the chef at Domingo restaurant, located in Cali, Colombia, and has been known for approaching her profession from an investigative perspective on food and the context that surrounds it. "When I think about these challenges, I feel that there is a great opportunity to share our knowledge and delve into the deep desire of visiting Colombia through its ingredients," mentioned Vélez about her participation in the Avianca Insignia menu.
In this regard, Álvaro Clavijo commented that "it is a pride to have Colombia in the air with a chef with a career like Catalina's, who has put Cali on the map with its gastronomy and ingredients." In addition to collaborating on this menu, Clavijo teamed up with Avianca to identify culinary talents like Vélez, to showcase the best of local gastronomy at 36,000 feet above sea level and, in the future, other emerging talented chefs will join this gastronomic proposal.
"The menu offered as part of the Avianca Insignia experience is a platform to highlight the flavors of Colombia and Latin America, with unique local ingredients that are literally elevated thanks to the techniques of chefs with the experience of Catalina Vélez and Álvaro Clavijo. This will enhance our services for passengers traveling in business class to London, Paris, Madrid and Barcelona," said Katherine Stradaioli, Vice President of Customer Delivery at Avianca.
In addition to this menu, the Avianca Insignia experience offers passengers traveling in business class a flatbed seat —seats that recline to a completely horizontal position—, an Amenity Kit with collectible cases designed by Colombian luxury accessories brand Mola Sasa, in collaboration with the indigenous Gunadule community, and products from Loto del Sur, as well as a renewed selection of international wines, among other features that make this a superior option.
Connecting with Europe
Currently, Avianca's passengers can choose from the 58 weekly flights from Colombia to Europe (Spain, France and the United Kingdom). The company operates 28 frequencies on the Bogotá-Madrid route; 4 frequencies on the Medellín-Madrid route; 3 frequencies on the Cali-Madrid route; 7 frequencies on the Bogotá-Barcelona route; 7 frequencies on the Bogotá-London route, and 5 frequencies on the Bogotá-Paris route. In total, Avianca's operations to Europe provide a total of 32,000 seats available every week.
