Jennifer Rodríguez will be the new guest chef at the Insignia experience by avianca

  • Beginning in March, a menu created by chefs Álvaro Clavijo from El Chato restaurant and Jennifer Rodríguez from Mestizo Cocina de Origen restaurant will be available as part of the Insignia by avianca Business Class experience on flights from Bogotá to Europe.
  • Jennifer Rodríguez was recognized in 2021 in the category of most innovative producers by the 50 Next list, which highlights young culinary talents.
  • In addition, since November 2024 customers who access the Insignia by avianca experience can enjoy a menu created by Alvaro Clavijo on flights from Madrid and Barcelona to Bogotá, Medellín and Cali.

Bogota, February 26, 2025. Since March of this year, Jennifer Rodríguez, chef and owner of the Mestizo Cocina de Origen restaurant, located in Mesitas de El Colegio (Cundinamarca, Colombia), will debut as a guest chef on Insignia by avianca’s Business Class experience menu, available on flights from Bogotá to London, Paris, Madrid and Barcelona, with the collaboration of Alvaro Clavijo, chef of El Chato, who ranks 25th in The World’s 50 Best Restaurants.

Jennifer Rodríguez’s work is characterized by the use of local ingredients, most of which come from around the Mestizo Cocina de Origen restaurant in Mesitas de El Colegio, a municipality located approximately 60 kilometers from Bogotá. Rodriguez was selected in 2021 as one of the most innovative producers by 50 Next, a list produced by The World’s 50 Best, which highlights talents who will be the future of global cuisine.

“This is a great opportunity to share my experience in cooking and the work that has been done at Mestizo Cocina de Origen, to put the culinary legacy of rural Colombia on the map,” said Jennifer Rodriguez about what it means for her to bring her talent 36,000 feet in the air for Insignia by avianca customers to enjoy.

Another new addition to Insignia by avianca’s culinary offering is the addition of Alvaro Clavijo’s preparations on flights from Madrid and Barcelona to Bogotá, Medellín and Cali.

“Expanding the availability of the menu created by Álvaro Clavijo on the routes from Spain to Colombia allows us to give greater visibility to this fine dining offer, with signature cuisine that highlights the traditions and ingredients on both sides of the Atlantic,” said Katherine Stradaioli, vice president of Customer Delivery at avianca. 

In addition to this menu, the Insignia by avianca experience on flights to and from Europe gives passengers access to a fully reclinable Flatbed seat, an Amenity Kit with collectible cases designed by Colombian accessory brand Mola Sasa, made in collaboration with the Gunadule Indigenous Community, and Loto del Sur products and an updated international selection of wines, among other attributes that make this a superior choice.
